Healthy Brunch Tips: Avoid Mistakes During The Celebratory Morning Meal

As many of us celebrate Easter with a festive brunch, we may find ourselves staring down a monster buffet table. What should you grab? When is it okay to indulge and what constitutes a major diet setback? We asked our favorite nutrition experts to outline their absolute brunching don'ts as we head into the holiday.

1. Brunching In The First Place

"Honestly, the biggest mistake is going to brunches at all," says Ruth Frechman, M.A., R.D., C.P.T. "It?s calorie suicide. Typically, brunches are expensive. Most people want to get their money's worth. They could easily consume 4,000 calories in one meal. The average person only needs 2,000 calories for the entire day."

2. Choosing Sweet Over Savory

This is the central question of brunch: Do you go sweet or savory? Pancakes or eggs? Now we have an answer: savory (but not too salty!).

"My number one brunch don't would be dishes that are practically made of pure carbs like pancakes or waffles. Because these are digested so quickly they're guaranteed to make your blood sugar spike and then plummet," says Karen Ansel, R.D. "While you might feel fine for a while you're inevitably going to get that carb coma feeling a couple of hours later. Adding sugary maple syrup to these only adds insult to injury. Instead pick something that's more balanced with a combination of protein, complex carbs (preferably from whole grains) and some healthy fat like huevos rancheros with avocado."

3. Confusing Brunch and Breakfast

"One of the biggest mistakes people make, they do before they even get to brunch. And that's not eating anything at all," says Rachel Begun, M.S., R.D., registered dietitian and spokesperson for the Academy of Nutrition and Dietetics. "You need calories to burn calories, meaning you need to eat food to get the metabolism going. If you wait until late morning or early afternoon to eat something, your metabolism is sluggish and not operating at maximum capacity. Plus, going to brunch starving is a recipe for overeating."

Joy Dubost, Ph.D R.D. C.S.S.D. agrees: "We may think because we are combining two meals we can [eat more]," she says. "But if you are not careful on choices and portion-size, brunch can quickly exceed calories consumed in two separate meals."

Instead, try to have a healthful snack in the morning before you head out the door -- something that combines fiber and protein, like low-fat cheese with an apple or yogurt with berries and slivered almonds.

4. Ordering From The Drink Menu

Alcoholic brunch drinks like bloody marys and "adult" coffee drinks are an easy way to go overboard on the calories without even realizing it. "Consuming multiple beverages, particularly those that are higher in calories, can end up being a high calorie meal on its own," explains Dubost. "I would recommend keeping it to one 12-ounce beverage. For lighter options you may want to choose mimosas or wine spritzers."

5. Beware Customizable Options

We're looking at you, omelet bar. The egg base might be just fine, but add enough meats and cheeses and you've got a calorie bomb on your hands.

"Many dishes can be higher in calories because we load them with numerous ingredients," says Dubost. "Try to keep it more basic or include various flavorful vegetables."

6. Thinking About Calories, Fat ... But Not Sodium

Between the bloody mary mix, hollandaise sauce and hash browns, brunch can amount to a salt lick. And while you might choose egg whites for your omelet and salad on the side, it won't do much to lower the sodium of your meal. That means you can easily surpass the government's daily recommendation of 2,300 mg within a matter of bites.

Horsforth family seeks funds to help bring baby home

A couple who were stranded in Spain after their baby was born prematurely are trying to raise ?12,000 to bring her home.

Zowie Lyons, 25, and Sam Hilton, 20, from Horsforth, were on a short break when Ellizeah arrived 13 weeks early in January, weighing just 2lb 2oz.

Ellizeah has already undergone three operations and is now facing a fourth. She is expected to be in hospital in Alicante for at least another ten weeks.

The couple went on holiday without travel insurance and are trying to raise ?12,000 to bring their daughter home in a fully-equipped plane which can fly a specialist team to Spain to meet them.

Zowie?s sister Cara Whitaker said the couple had wanted to bring Ellizeah home for her fourth operation, but this now looked unlikely. ?She is doing well but the hospital have concerns that she is losing weight quite fast,? she said.

Satechi 10-Port USB 3.0 Hub

By Ahmer Kazi Who can argue with having more USB ports? This question rings especially true in an age where folks typically have more USB-enabled devices than available USB ports on our PCs. The Satechi 10-Port USB 3.0 Hub ($69.99 list) aims to address this imbalance by serving up a hub that adds a net gain of nine additional USB 3.0 ports and can charge tablet devices like the Apple iPad. Although it's somewhat pricey and requires an external power supply, it nonetheless succeeds in multiplying your connectivity options more than any of the ports that we've seen thus far. If you have a bunch of peripherals or are simply tired of constantly swapping devices in your system's USB ports, it's worth checking out.

The 10-Port USB 3.0 Hub's plastic chassis measures 1.06 by 1.75 by 8.69 inches (HWD), resulting in a long thin strip that looks a lot like a surge protector. While its glossy black finish is easy on the eyes and complements its array of blue USB 3.0 ports and LED lights, it also attracts a considerable amount of smudges and fingerprints much like the Satechi Slim Surge Protector. Although, the 10-Port USB 3.0 Hub itself is slim enough to slip into your laptop bag or place on your desk without occupying too much space, its power supply adds some bulk.

As its name suggests, there's a total of ten USB 3.0 ports on the 10-Port USB 3.0 Hub. It connects to your system via the included USB 3.0 cable, and the net gain of nine USB 3.0 ports yields far more connectivity options than either the Satechi Ultra Portable 4 Port USB Pocket Hub or the Targus Ultralife USB Hub with Ethernet Port.

Nine of the 10-Port USB 3.0 Hub's USB 3.0 ports are housed on the face of the hub. These nine ports are divided into groups of three, and three corresponding switches on the front panel's left side control the power supply for each group. When switched on, a blue LED accordingly illuminates the corresponding trio of ports. Thanks to the 10-Port USB 3.0 Hub's strip-shape design, there's enough space to prevent neighboring ports from overcrowding one another. The 10-Port USB 3.0 Hub's tenth and final USB port, meanwhile, sits alone on the right panel alongside its own dedicated on/off switch. Unlike the 0.9 amp of power found in the other nine ports, this particular port provides 2.1 amps, and its increased amperage allows it to charge iPads and other similarly-sized tablets.

During testing, the 10-Port USB 3.0 Hub worked just as one would expect, and I experienced no difference in performance when transferring a 1.22GB test folder from a flash drive plugged directly into my computer and when it was plugged into the 10-Port USB 3.0 Hub. The 10-Port USB 3.0 Hub is compatible with Windows (98SE/ME/2000/XP/Vista/7/8) and Mac (OS 9.1 or later), and since it's a plug-and-play device, setting it up requires little beyond plugging it into one of your system's USB ports and a power outlet. Like the Satechi 3.0 4-Port USB Hub, it relies on an external power source. While I typically prefer bus-powered hubs for their unfettered portability, this shortcoming is more forgivable in the case of the 10-Port USB 3.0 Hub since it requires more electric current stability for its considerable amount of ports and tablet-charging capability.

All said, the Satechi 10-Port USB 3.0 Hub is an efficient way to multiply your USB 3.0 connectivity options. Although it costs a bit more than the competitors and requires an external power supply, these shortcomings are understandable considering its net gain of nine USB 3.0 ports and compact size. If you find yourself juggling a bunch of peripherals or have simply grown tired of constantly swapping peripherals out of your USB ports, it's worth checking out.

Syrian officials: 12 killed in university attack

DAMASCUS, Syria (AP) ? Mortar shells slammed into a cafeteria at Damascus University Thursday, killing at least 12 people and wounding 20, according to state media and an official. It was the deadliest in a string of such attacks on President Bashar Assad's seat of power, state media and an official said.

Rebels began firing shells at the capital earlier this year, and the strikes have become increasingly common in recent weeks as rebels clash with government troops on the city's east and south sides.

State-run TV said 12 people were killed when mortar shells struck the cafeteria of the university's architecture department in the central Baramkeh district. A Syrian official who spoke to The Associated Press on condition of anonymity because he was not authorized to give official statements said 20 people were wounded in the attack.

There was no immediate claim of responsibility for the attack, which came two days after rebels barraged Damascus with mortar shells that killed at least three people and wounded dozens.

The shelling rarely causes many casualties, but it has shattered the aura of normalcy the regime has tried to cultivate in Damascus.

The government blamed "terrorists," the term it uses for rebels fighting to oust Assad, and called the attack as a "barbaric massacre."

Government-run Al-Ikhbariya TV station showed footage of plastic tables and chairs turned upside down, shattered glass and pens and books scattered on the floor. Pools of blood were seen on the floor of the open-air cafeteria.

The Britain-based Syrian Observatory for Human Rights confirmed the attack saying many of the wounded were in critical condition.

Utah governor says Chevron leak is unacceptable

SALT LAKE CITY (AP) -- A series of spills from ruptured pipelines operated by Chevron Corp. has Utah's governor calling for more oversight.

Gov. Gary Herbert left no doubt about his displeasure Thursday when asked about the latest spill at a monthly televised news conference. He said the federal agency responsible for interstate pipelines isn't doing its job and that Utah will step up its own efforts to ensure pipeline safety.

The pipeline ruptured last week at Willard Bay State Park, spilling diesel fuel into marshes. It was Chevron's third pipeline leak in Utah in the last three years.

Another pipeline leak sent crude oil rushing down into a Salt Lake City creek in 2010. Months later, the same pipeline ruptured again.

Each pipeline leak involved a spill of 21,000 or more gallons of crude oil or fuel.

"If anything's been disappointing in the past couple of weeks, it's been this Chevron oil spill," Herbert said Thursday. "This is just not acceptable. We need to take a more proactive stance."

Herbert said his state departments of commerce and environmental quality are looking to hold Chevron more accountable.

"With interstate pipelines, that's a federal responsibility of the Pipeline Hazardous Material Public Safety Administration ? which is a mouthful to say ? but that's their responsibility, and obviously they've not done a very good job of overseeing the pipes that travel between our states," said Herbert, a Republican. "This is just not an acceptable situation. We will make sure that Chevron does what it needs to do to clean this mess up."

State officials are crediting a beaver dam for helping contain the fuel spill at Willard Bay State Park, but it left a family of beavers with petroleum burns. The beavers were rescued and are being doused three times a day in hourlong baths with Dawn dish soap to remove diesel fuel from their fur.

Chevron said Thursday that it had more than 130 people working in a round-the-clock cleanup operation.

"Chevron Pipe Line Co. regrets this incident and we are committed to remediating the affected area and mitigating all impacts on the environment," company spokesman Gareth Johnstone said in a statement. "Safety and environmental protection are core values for Chevron, and throughout this incident we continue to work with state and federal authorities."

The Pipeline Hazardous Material Public Safety Administration says it ordered Chevron to ensure safety before it restarts the pipeline.

"We are investigating the cause of the failure and we will carefully monitor the activities of Chevron Pipe Line Co. as we move forward with our enforcement efforts," said Jeannie Layson, a spokeswoman for the Pipeline Hazardous Material Public Safety Administration.

Chevron was fined more than $400,000 for the two earlier pipeline spills. It also paid a $4.5 million settlement to Utah and Salt Lake City and spent millions more cleaning up the first of three oil spills in 2010 that fouled Red Butte Creek, said Art Raymond, a spokesman for Mayor Ralph Becker.

"Chevron remains on the hook for any further cleanup if somebody turns over a rock and finds oil residue," Raymond said.

NOvA neutrino detector captures cosmic rays in 3D, aims to unlock the mysteries of the universe

All apologies accepted if you mistook that image above as cover art for Daft Punk's new album -- it's not (although the duo should consider it.). That Tron-ish, equalizer-like graphic is actually a 3D representation of particle activity left behind by cosmic rays interacting within NOvA, the Department of Energy's under construction neutrino detector. It's the first such visual record made possible by the University of Minnesota-operated facility that, when completed, will extend for more than 200 feet underground in an area near the Canadian border and endure regular bombardment by a controlled stream of neutrinos. Beyond its obvious visual appeal, data like this should give physicists at the DOE's Fermi National Accelerator Laboratory insight into the nature of neutrinos (some of which are said to have been issued from the Big Bang) and, by extension, the origins of our ever-expanding universe. For now, though, the project's still in the baby steps phase -- only 12 feet of the detector (the currently operational portion) has been successfully built out -- so the reality-shattering, scientific epiphanies will have to wait. Until then, it's all still life as we safely know it.

Proximity to coal-tar-sealed pavement raises risk of cancer, study finds

Mar. 28, 2013 ? People living near asphalt pavement sealed with coal tar have an elevated risk of cancer, according to a study in the journal Environmental Science and Technology. Much of this calculated excess risk results from exposures in children, age six or younger, to polycyclic aromatic hydrocarbons (PAHs) from the sealant.

"The increased cancer risk associated with coal-tar-sealed asphalt (CSA) likely affects a large number of people in the U.S. Our results indicate that the presence of coal-tar-based pavement sealants is associated with significant increases in estimated excess lifetime cancer risk for nearby residents," said E. Spencer Williams, Ph.D., principal author of the study and Baylor University assistant research scientist at the Center for Reservoir and Aquatic Systems Research in Baylor's College of Arts & Sciences.

Researchers from Baylor University in Waco, Texas, and the in Austin, Texas, are the first to report on the potential human health effects of PAHs in settled house dust and soil in living spaces and soil adjacent to parking lots sealed with coal-tar-based products.

"Exposure to these compounds in settled house dust is a particularly important source of risk for children younger than six years of age, as they are expected to ingest this material at higher rates," Williams said. "This indicates that the use of coal-tar-based pavement sealants magnifies aggregate exposures to PAHs in children and adults in residences adjacent to where these products are used and is associated with human health risks in excess of widely accepted standards."

Data on PAHs in settled house dust used for this analysis were published previously by the same authors. In that study, settled house dust and parking lot dust were sampled for 23 ground-floor apartments in Austin, Texas. The parking lot surfaces adjacent to the apartments were coal-tar-sealed asphalt, asphalt-based sealant over asphalt pavement, or unsealed concrete. Concentrations of PAHs were 25 times higher in house dust in residences adjacent to coal-tar-sealed pavement compared to those with other pavement types. "This study was the first to find a strong association between a product or a behavior and PAHs in house dust," said Barbara Mahler, the USGS research hydrologist who oversaw the study.

For this study, doses and risk associated with residences adjacent to unsealed asphalt lots were considered relative to those adjacent to (CSA) parking lots. Benzo(a)pyrene concentrations in CSA-affected settled house dust were high relative to those reported in most parts of the U.S. where coal-tar-based sealcoat is not used (California and Arizona). Data for PAHs in coal-tar-sealed asphalt-affected soils and unsealed asphalt-affected soils are available from samples from New Hampshire and suburban Chicago.

The analysis did not consider exposure to the dust on the pavement itself, which has PAH concentrations 10s to 100s of times higher than those in house dust or soil, or inhalation of air over sealed pavement. "Over time, about half of the PAHs in the sealcoat are released into the air, and concentrations in air are extremely high, particularly in the hours to days after application," said Peter Van Metre, USGS research hydrologist and author of two papers on volatilization of PAHs from sealcoat.

Sealcoat is a black, shiny substance sprayed or painted on the asphalt pavement of parking lots, driveways, and playgrounds to improve appearance and protect the underlying asphalt. An estimated 85 million gallons of coal-tar-based sealant are applied to pavement each year, primarily east of the Continental Divide in the U.S. and parts of Canada. Coal-tar-based pavement sealants are 15 to 35 percent coal-tar pitch, which has been classified as a human carcinogen by the International Agency for Research on Cancer. Over time, the dried sealant is worn away from pavement surfaces, and the resulting mobile dust particles can be transported into nearby homes.

"Although the analysis presented here is based on a limited dataset, the results indicate that biomonitoring might be warranted to characterize the exposure of children and adults to PAHs associated with coal-tar-based pavement sealant," Williams said. "Further investigation is also needed into the impacts of coal-tar-based pavement sealants on PAH concentrations in indoor and outdoor environments."
